Cow milk cheese
Around the world, most cheese is made from the milk of the cow. Cow milk cheese tends to be the “norm” for many, and have set the “baseline” for many people’s cheese palates – less sweet than sheep milk, and less earthy than goat milk.
“Of equal significance is what the animals eat. Even the most unobservant amongst us can fail to see and smell the difference between fresh grass, wild clover and unspoilt meadows compared with compacted feed, silage, turnips and straw.”
– The World Cheese Encyclopedia, 2010, Hermes House
