Anabasque cheese, Landmark Creamery, Albany, Wisconsin

Made from pasteurized sheep milk.

Anabasque is an aged sheep milk cheese.  It’s nutty, salty and has a pleasantly sheep-y finish.  It is cave-aged for a minimum of three months.

This cheese was inspired by Ossau Iraty and cheese from the Basque region of France and Spain, and is made by two women who are both named “Anna.”

So…Anabasque!  Climb a mountain, look at the Mediterranean and eat some cheese.

Anabasque cheese

Landmark Creamery is located in Albany, Wisconsin, and was founded in 2013, by Anna Landmark and Anna Thomas Bates.  The two met at a potluck for Green County Women in Sustainable Agriculture in 2012, and found they had similar interests and complimentary talents.

In addition to these, Landmark Creamery makes other cheeses.  It is located in Green County, part of the southern Wisconsin “Cheese Belt.”

Anabasque is good alone or used as kitchen cheese.  Use it to anchor a cheeseboard, shave it onto pasta or melt into a butternut squash risotto.

Pairing suggestions:  Fruity red wines, hard cider, marcona almonds or dried apricots.
