Made from pasteurized sheep and goat milk.
Carr Valley Cheesemaker Sid Cook has created a U.S. version of the famous French cheese, Morbier. The Wisconsin creation combines a layer of goat milk cheese with a layer of sheep milk cheese, and separates them with a layer of grape vine ash. Mobay, therefore has three ways of exciting your tastebuds – try the goat cheese layer, then the sheep cheese layer and the both. The resulting flavors are rustic, yet delicate.
Mobay won the Silver Medal at the 2011 World Cheese Awards.
