Pleasant Ridge Reserve cheese
This cheese was named after the land formation on which the Uplands Cheese farm sits. Pleasant Ridge Reserve cheese is made in the tradition of Alpine cheeses like Gruyere and Beaufort. Presently, the cheesemakers at Uplands Cheese only make Pleasant Ridge Reserve from May through October. That is when their cows are eating fresh, natural plant pasturage. The resulting grass-fed, raw milk produces flavors in the cheese that can’t be replicated by “ordinary” milk. Andy Hatch, Uplands Cheese cheesemaker, says using only the ideal milk is the most important component in ensuring the quality of cheese from Uplands Cheese.
Pleasant Ridge is a cheese made with only the milk of the farm’s own mixed herd of 140 or so Holsteins, Brown Swiss and Jerseys. Production is very small—about 6,000 wheels this year. They utilize a seasonal, open grazing system, which means all the milk used to make the Pleasant Ridge Reserve is taken when the cows are happy and content out in the open pasture. Happy cows make great tasting milk. The wheels Fromagination receives are specially selected for us.
