Fresh, Soft & Bloomy Cheese
Fresh, soft and bloomy is a label that certainly covers a lot of territory.
Fresh cheeses don’t have rinds, such as some goat cheeses, fresh mozzarella, ricotta and cream cheese. Bloomy-rind cheeses are purposely exposed to mold spores to create a gently fuzzy rind on the outside. These rinds, like those of Brie and Camembert, are generally edible.
