Our choices include pepperoni, sopressata, chorizo, salami, prosciutto and several others.

The first record of preserved meats dates from the first century AD, when the Romans began to regulate pork preparation.  Records existed in Gaul (now France!) that discussed salted meats.  The French have been doing this for quite a while.
