Aahle Worscht is a hard pork sausage, originally made in northern Hesse, Germany. In fact, it’s name is a dialectal form of alte Wurst, meaning “old sausage”. In traditional manufacturing, only heavy pigs are processed and quality cuts of meat produced. Slow maturation at relatively high humidity is what gives this sausage it’s edge.
