Belle Vue Cake of Cheese

The Belle Vue Cake of Cheese features three artisan cheeses:

• Mount Tam is fresh, cow milk cheese made by Cowgirl Creamery in Petaluma, California.  Additionally, Mount Tam is a triple-cream, with flavor hints of mushroom, and has won the American Cheese Society awards more than once.
• Bent River is a soft, cow milk cheese made by Alemar Cheese Company in Mankato, Minnesota.  This Camembert-style cheese possesses a mushroom flavor, and is smooth and creamy.  In fact, its light yellow paste grows more pungent as it is allowed to age.
• Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California.  In fact, it is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier.  Also, it ripens from the outside.  This H.F. Remix contains a seasonal herb flavoring – lavender, fennel, dill, etc. – which rotates depending on the time of year.

This cake is approximately 6 inches wide (at its base) and 9 inches tall.  It contains approximately 70 1-ounce servings of cheese.
