Made with sheep milk.

Aged a minimum of three months, open-air, in an aging cellar, this sheep milk cheese develops a natural rind and complex flavors.

It becomes earthy, yet still sweet (due to the sweetness of sheep milk).


Marisa cheese

Boasting a natural rind, Marisa cheese gets its flavor from open-air cave aging.  This cheese is matured in the Carr Valley cheese cellar for at least 90 days.

This cheese won 1st place at the 2015 U.S. Championship Cheese Contest.
