- Red Hawk is a soft, cow milk cheese made by Cowgirl Creamery in Petaluma, California. Furthermore, this is a triple-cream, aged 4 weeks and washed in brine, with a smooth texture and pungent flavor.
- Bent River is a soft, cow milk cheese made by Alemar Cheese Company in Mankato, Minnesota. In fact, this Camembert-style cheese possesses a mushroom flavor, and is smooth and creamy. Also, its light yellow paste grows more pungent as it is allowed to age.
- Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California. It is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier. It ripens from the outside. Additionally, this H.F. Remix contains a seasonal herb flavoring – lavender, fennel, dill, etc. – which rotates depending on the time of year.
- Dunbarton Blue is a firm cow milk cheese made by Roelli Cheese Haus in Schullsburg, Wisconsin. Also, it is an award-winning white Cheddar with a few veins of Blue running through it – the combination of flavors is stunning.
This cake is approximately 8 inches wide (at its base) and 15 inches tall. It contains approximately 182 1-ounce servings of cheese.
