Made from pasteurized cow milk, featuring vegetarian rennet.

This eight-year-old Cheddar is one of Hook’s Cheese’s crown jewels (Hook’s also produces a five year, 10 year, 12 year, and 15 year). This one is the “white sheep,” so to speak, of the family…as all the others are colored the traditional Wisconsin yellow Cheddar with annatto.

Unlike a typical processed supermarket cheddar, Hook’s Eight-Year Aged Cheddar is wonderfully natural and full-flavored.

Hook’s Eight-Year Aged Cheddar is a great addition to any cheese tray!

Tony and Julie Hook have been making cheese in Wisconsin for more than 30 years. Starting out as a fairly small operation, the Hooks made primarily Cheddar and Swiss cheeses. Some years later they expanded to Colby, Monterey Jack, and flavored Jacks and eventually they grew to such an extent that they needed to find a larger working space. Many more artisan cheeses and awards later, the Hooks now make cheese from their Mineral Point location in southwestern Wisconsin.

Pairing suggestions: Fromagination’s Cranberry Relish made by Quince & Apple, Door County dried cherries, Guinness beer, Argentine Malbec wine.
