This English classic Blue cheese is crumbly & fudgy but retains a creamy texture that practically dissolves on the tongue. All hail the king of Blues!

Colston-Bassett Dairy has been making Stilton the old-fashioned way since the early 20th century. They source their milk from only five neighboring farms, and that attention to detail and quality shows through in the finished product. This blue is formidable; there’s no denying that. But the strength of the penicillium roqueforti doesn’t overpower the flavors of lush, grassy milk.

Colston Bassett Dairy has been making Stilton for over 100 years.  This Stilton is pierced less than others to yield a richer, creamier texture. Colston Bassett works with only five farms in Nottinghamshire to source its high-quality milk.

Pairings: Fresh pears or figs; Port wine, barleywine or imperial Stout.
