Timber Coulee cheese
Brenda Jensen is the cheesemaker for Hidden Springs Creamery. Brenda learned to make this cheese from a French master cheesemaker who visited her farm in 2011 and trained her to make cheese in the Ossau Iraty style. Timber Coulee cheese is just one of the cheese that we carry from Hidden Springs Creamery! Brenda and Dean Jensen run Hidden Springs Creamery, which started with a herd of 50 dairy sheep. Now they make eight cheeses, and milk a lot more sheep. They sell everything from Driftless, a fresh cheese similar to Chevre, to a hard, Spanish-style Manchego cheese.
