Hook’s Cheese, known for aged Cheddars. The Five-Year Aged Cheddar is a perfect fit for this collection as the sharp bite add a nice layer of flavor. Hooks has been aging Cheddar cheeses for more than 30 years in the curing caves at appropriate temperature and humidity which help develop rich, complex flavors.
Deer Creek Cheese, where Chris Gentine of the Artisan Cheese Exchange, is a Wisconsin Master Cheese Grader. He hand-selects the best Wisconsin cheeses that will suit further aging. Deer Creek represents the outcome of this enterprise. The Stag is rugged, driving strong toffee and butterscotch notes, yet possesses a sweet finish. As it ages (about 17 months), The Stag develops a hint of crystalline crunch to further enliven the taste buds with rich texture as well as flavors.
LaClare Family Creamery produces farm-based artisan goat milk cheese. In 2011, cheesemaker Katie Fuhrmann’s Evalon was named the 2011 U.S. Championship Cheese by a national panel of expert judges. She took top honors out of 1,604 entries from 30 states for this hard goat milk cheese, made from raw milk and modeled after a Gouda-style with fruity nutty flavor profiles resembling Parmesan and Asiago. It is aged a minimum of five months.
Emmi Roth USA, Monroe, Wisconsin, makes Grand Cru Surchoix, the 2016 World Cheese Championship Winner!
