This cheese was the First Runner Up in the 2023 U.S. Championship Cheese Contest. It’s aged three or more years and is a semi-hard cheese – similar to the consistency of a Gouda – with hints of toasted pineapple and caramel.  It’s perfect for grating into pastas, salads and risottos.

The younger Cupola cheese is aged 6-9 months (and is also delicious).

Aged 3+ years. Created with a recipe perfected with the help of experts at the Wisconsin Center for Dairy Research.
