Made from pasteurized cow and sheep milk.

This is cheese is exclusive to Fromagination. It is aged 11 years and packed with crunchy calcium crystals, nutty and sharp notes with a smooth finish.

It’s a distinctly flavored cheese made by Master Cheesemaker Sid Cook of Carr Valley.  It will not last long. The Cook family has made cheese for four generations. We are excited to present this cheese.

A Wisconsin Master Cheesemaker, Carr Valley Cheese producer Sid Cook has created excellent cheeses of various milk types over the years. This cheese is another example of his interesting taste creations.

Pairing suggestions: This well-balanced cheese is great with a red wine and paired with Potter’s Caramelized Onion Crackers, and Shallot & Red Wine Confit from Quince and Apple.
