Mountain cheese is made from the milk of animals who have grazed in high mountain pastures. It is historically Swiss, French, Italian or Spanish cheese, because of the cheese-making heritage in the Alps. Wisconsin artisan producers now make excellent (Alpine-style) mountain cheeses.
