Edelweiss Creamery is located in Monticello, Wisconsin. Its leader, Bruce Workman, is a state-certified Wisconsin Master Cheese Maker, who has been producing cheese in southern Wisconsin for years. Edelweiss makes a variety of cheeses, but it’s best known is traditional Emmentaler, a Swiss stand-out that is made with raw milk and in copper vats.
