Bleu Mont Dairy is located near Blue Mounds, Wisconsin, 25 minutes west of Madison. Its cheesemaker, Willi Lehner, got his training from his father, who made cheese in Switzerland. Willi has studied cheesemaking further in Europe, and created an aging cave in Wisconsin that produces outstanding bandaged Cheddar cheese in the low hills of western Dane County.
