You’ll taste a variety of sheep milk cheeses and learn how their higher butterfat content creates luxurious textures and complex flavors.

A representative from the Sheep Dairy Association of Wisconsin and a sheep geneticist will share stories of cheesemakers who keep this heritage alive, discuss the science behind sheep milk, and offer pairing tips to enhance this distinct flavor of these special, rich cheeses.
