North Fork Munster is a French-style Munster washed with local Minnesota 14 Whiskey made at nearby Panther Distillery. Redhead’s cheesemakers have created a creamy, stinky, pungent cheese that is sold with the rind tied with muslin to keep its gooey paste inside.

This award-winning Munster cheese was named after the North Fork of the Crow River, in Redhead Creamery’s backfield.

Don’t worry if North Fork has mold growth on the rind. It is still safe to eat.

North Fork will continue to break down as it ages. The middle will become gooey with time and the flavor will increase in depth. They suggest slicing the top rind off and scooping the paste out.

Hand-crafted in 6-ounce rounds. Each round weighs approximately 6 ounces and will serve 2 to 3 people. Best served at room temperature.

North Fork Munster cheese

Lucas and Alise Sjostrom, are making some amazing new cheeses at their farmstead Redhead Creamery near Brooten, Minnesota.  Both have ties to Wisconsin, as Alise, the cheesemaker, worked at Crave Brothers Farmstead Cheese in Waterloo, Wisconsin, and Lucas wrote for Hoard’s Dairyman in Fort Atkinson. North Fork Munster cheese is just one of a number of great cheeses this farm makes.

Furthermore, they won The Innovative Dairy Farmer of the Year Award in 2017 and the U.S. Dairy Sustainability Award for Outstanding Dairy Farm Sustainability in 2016.

Pairing suggestions: Orange Marmalade with Lemons, Door County Dried Cherries, Six Seed Crackers.
