Made from pasteurized cow milk.

This version of Wensleydale – a classic English firm, table cheese – has cranberries in it.  The tart cranberries pair very well with the natural sweet acidity of the cheese.

Wensleydale has traditionally been made as a farmhouse cheese in northern England…since the 11th century, usually by monks.

It is aged 2 to 4 months.  This version is made with vegetarian rennet.

The plain version is traditionally eaten with apple pie.

Description

Wensleydale cranberry cheese

Wensleydale with cranberries is a hand-made Yorkshire cheese. It is made from milk drawn from cows grazing the sweet limestone pastures on surrounding farms in Upper Wensleydale. This gives the cheese the unique flavor for which it is renowned.

The cheese is a fresh, young cheese taken at only three weeks old – it has a clean, mild, slightly sweet flavor with a honeyed aftertaste.

Suggested pairings: Apple pie, Champagne, Port wine and fresh fruit.  And we love this cheese in a turkey sandwich: Oatmeal bread, sliced turkey, spinach, Wensleydale and cranberry sauce, spread on one slice of  the bread.
