Derby Hat Cake of Cheese

• Wabash Cannonball is a soft, goat milk cheese made by Capriole in Greenville, Indiana.  Like its namesake, the train, this cheese travels to your cheese board rather quickly – ripening in only 10 days.  It has won Best in Show at the American Cheese Society awards.
• Triple Play is a mixed-milk cheese made by Hook’s Cheese in Mineral Point, Wisconsin.  Furthermore, its name reflects the combination of sheep, goat and cow milks that flavor this unique creation, which the producer says has notes of Havarti, Gouda and baby Swiss cheeses.
• Porto Duet is a sheep milk cheese made by Carr Valley Cheese in La Valle, Wisconsin.  In fact, it is washed in Port wine from Wollersheim Winery in Prairie du Sac, Wisconsin.

This cake is approximately 6 inches wide (at its base) and 11 inches tall.  It contains approximately 66 1-ounce servings of cheese.
