Made from pasteurized cow milk.

Roelli Cheese is a recent success story in the Wisconsin artisan cheese movement.  This cheese won the gold medal at the 2016 World Championship Cheese.

NOTE: This cheese is available in two colors – a white Cheddar (no coloring added) and a traditional Wisconsin orange Cheddar (colored with annatto) – and includes a coated edible rind.

Haus Select ages in cheesecloth for a minimum of four months, although most of the wheels leaving Wisconsin are eight months old or more.

Roelli Cheese Haus, the maker of Haus Select Cheddar cheese, is located in Shullsburg, Wisconsin.

Wisconsin Master Cheesemaker Chris Roelli leads this company, which has been making artisan cheeses since 2006. Roelli comes from Swiss ancestry and his great-grandfather came to the United States in the 1920s and began making cheese.  From that time, four generations of the Roelli family have been in the cheese business at this location, building on the commitment to quality, service, and customer satisfaction. This long-standing commitment continues to be the cornerstone of their business.

Roelli Cheese Haus makes award-winning cheese such as Little Mountain, Red Rock, and Dunbarton Blue. Little Mountain won the American Cheese Society’s Best in Show award in 2016.

Pairing suggestions: Cranberry Relish, American pale ale, cider, or any red wine.
