The King Cheddar cheese
The King Cheddar cheese is a quest to capture the flavor of Cheddar from the 1940s and 1950s, which formed the bedrock of Wisconsin’s Dairy State reputation. The Deer Creek cheesemakers began by utilizing old legacy cultures and the prominent enzymes in Wisconsin during the 1940s. They added them to milk from small family farms and used a traditional slow cheddar technique for great aged cheese. The cheese is formed in an authentic Daisy wheel format with the signature red wax finish. It is then cured for 18 months in poplar wood boxes to allow the cheese to develop complexity and the depth of an old-school-aged cheddar flavor.

The Artisan Cheese Exchange, located in northeast Wisconsin, makes a great variety of wonderful cheeses. Fromagination carries several of the Deer Creek brand varieties, including The King. Also carried by Fromagination are Imperial Buck, Blue Jay, Robin, Wild Boar, Rattle Snake, The Doe, Luna Moth, Vat 17 Cheddar and Proprietor’s Grand Reserve cheeses. Founder Chris Gentine chose the names and labeling for these artisan cheeses based her affinity for a children’s storybook, The Golden Story Book of River Bend, which was written by Richard Scarry’s wife Patricia Scarry.
