Hidden Springs Creamery is a leader in sheep milk cheeses.  Sheep milk is generally higher in fat and sweeter than cow milk.

This Manchego-style cheese is not made in the La Mancha region of Spain, but in the Driftless region of western Wisconsin. Like its foreign cousin in Iberia, it is firm, compact and buttery.

Wischego cheese

Wischego cheese is made by Hidden Springs Creamery, located near Westby, Wisconsin. It’s a locally made Manchego-style cheese. Hidden Springs produces lovely sheep milk cheeses, and some other mixed-milk offerings. Hidden Springs Creamery was started with a herd of 50 dairy sheep. Now they make eight cheeses, and milk a lot more sheep. They sell everything from Driftless, a fresh cheese similar to Chevre, to this hard, Spanish-style Manchego cheese.

“It started with a small herd of 50 dairy sheep and my husband Dean dragging me to sheep dairy co-op meetings. I thought he was crazy and I was right. Soon after we started milking, I realized our sheep’s milk was something very special and maybe we ought to be making cheese.” – Former owner, Brenda Jensen, in 2015.
