Saint Isidore’s Bandaged Cheddar is one of our most unique cheeses! Inga Witscher has a dairy farm outside of Osseo, Wisconsin. This micro-dairy has about a dozen Jersey cows that are rotationally grazed and milked twice a day. St. Isidore is the smallest dairy Fromagination partners with and there is a very limited supply of cheese.
About the Cheesemaker: Inga Witscher
Inga is a passionate dairy farmer and host of Wisconsin Public Television’s Around the Farm Table. She owns and operates the small organic farm, St. Isidore’s Dairy, near Osseo, Wisconsin. Her love for the land and passion for cheesemaking are what makes Wisconsin great.
When she’s not setting up pastures for her Jersey cows to graze, milking them, or making cheese with her father, Inga collaborates with her team to develop narratives for the Wisconsin Public Television show, Around the Farm Table. After growing up on her family’s dairy farm on the West Coast and making cheese on the East Coast, she is thrilled to be in the middle of the country–home to truly happy cows and a vibrant agriculture, all of which she loves to celebrate around the farm table.

This was great cheese! Knowing Inga and her cows produced this, only makes it better. Bought a second pound for a friend’s birthday because she loves a good cheese too.
