The Stag is an aged Cheddar that includes nutty, bold flavor that includes notes of butterscotch and toffee.  It is a bandage-wrapped Cheddar that develops a hint of crystalline crunch due to the aging process.

It is great with bold complimentary beers, wines or foods.

Description

Stag cheese

This is a cheddar derived from aging Deer Creek’s The Doe Cheddar for a longer period.  It maintains the sweet notes of that cheese, while becoming bolder and nuttier.

The Artisan Cheese Exchange, located in northeast Wisconsin, makes a great variety of wonderful cheeses.  Fromagination carries several of the Deer Creek brand varieties, including Rattlesnake cheese.  Also carried by Fromagination are Imperial Buck, Blue Jay, Rattlesnake, Robin, Proprietor’s Grand Reserve, The Doe and Vat 17 cheeses.  Founder Chris Gentine chose the names and labeling for these artisan cheeses based her affinity for a children’s storybook, The Golden Story Book of River Bend, which was written by Richard Scarry’s wife Patricia Scarry.

Pairing suggestions: beers – Stout, hard cider, or amber; wines – Pinot Noir, Red Zinfandel, or a nomadic reds; food – Cashew nuts, dried cranberries, dried cherries, Pistachio nuts, or Pumpernickel bread.
