Widmer’s Brick Cheese spread. Heritage: Brick is a Wisconsin original, first made by John Jossi around 1877. In fact, some Brick cheeses resemble European wash rind type cheeses.
“Very little has changed in the 80-plus years that my family has been making cheese here,” says, Joe Widmer, the current owner of Widmer’s about the plant where his cheese is made. Today, Widmer’s cheese is widely hailed for its authenticity, handcrafted quality and consistency. The company makes a wide range of cheeses. It’s best known for its traditional stirred-curd Wisconsin Colby, award-winning aged Cheddar and, of course, classic Wisconsin Aged Brick.
Pairing suggestions: Best served on Potter’s Winter Wheat crackers, or spread it on your favorite sandwich…which may include both grilled cheese and burgers.
