This tasty cake of cheese combines flavors from Germany, Vermont and the California coast!

Its top tier is a triple-cream, rich and smooth, from the Left Coast. Drop down a tier, and you get a famous Blue from Vermont cheese country.  Finish off at the bottom tier, which contains a bit of both – a German mix of traditional soft cheese with Blue mixed right in…one of Europe’s classics.  This cake makes a statement.

By the way, “Cambozola” combines two cheeses you may be familiar with: Camembert and Gorgonzola…get it?

Blue Horizons Cake of Cheese

The Blue Horizons Cake of Cheese features three cheeses:

  • Mount Tam is fresh, cow milk cheese made by Cowgirl Creamery in Petaluma, California.  In fact, Mount Tam is a triple-cream, with flavor hints of mushroom, and has won the American Cheese Society awards more than once.
  • Bayley Hazen Blue is raw cow milk cheese made by Jasper Hill Farms in Greensboro, Vermont.  Furthermore, it is a natural rind Blue cheese, less “hot” and more nutty, aged between 3 and 4 months.
  • Cambozola is made by Käserei Champignon in Heising, Germany.  Additionally, it is often referred to as a “blue brie,” with a rich, triple-creme consistency and blue mold added to give it a burst of flavor.  This version is the Cambozola Grand Noir (black label) which is often used on high-end cheese boards.

This cake is approximately 9 inches wide (at its base) and 13 inches tall.  It contains approximately 150 1-ounce servings of cheese.
