This is the “miniature” version of Harbison, in a five-ounce small wheel.

Harbison is a soft-ripened cheese with a rustic, bloomy rind, made by Jasper Hill Creamery. Young cheeses are wrapped in strips of spruce cambium, the tree’s inner bark layer, harvested from the farm’s woodlands. Harbison is woodsy and sweet, balanced with lemon, mustard, and vegetal flavors. There is a natural blue green flora present on the spruce cambium.

This cheese is not sold by the pound, but as one unit (5 ounces).

Harbison cheese

A smaller version of a Best in Show winner, Harbison—a spreadable bloomy-rind cheese wrapped in spruce bark, made by Jasper Hill Creamery. These miniature wheels are 5 ounces – about half the size of the regular Harbison.

Harbison is named for Anne Harbison, affectionately known as the grandmother of Greensboro. Along with breathtaking views, traditions and people are part of what makes Vermont’s working landscape special. They proudly honor Ms. Harbison’s contribution with this cheese.

Harbison won of ‘Best in Show’ at the American Cheese Society conference in 2018 and ‘Best American Cheese’ at the World Cheese Awards.

Pairing suggestions: Saucisson Sec, Maple syrup, roasted potatoes, Applewood Smoked Crackers.
