Made from pasteurized sheep and cow milk.

The Indigo Bunting is a very creamy, mixed-milk Blue cheese.  On its own, sheep milk is exceptionally creamy and often sweeter. However, to produce this special Blue, Deer Creek adds cow milk cream to create an extraordinary velvety cheese texture. The result is a creamy, decadent and unique Blue cheese.

This cheese won 3rd place in the 2024 American Cheese Society competition in the rindless / Blue-veined / non-cow milk category.

Indigo Bunting Blue cheese

Ingredients: Pasteurized Cultured Sheep Milk, Cow Cream, Salt, Enzymes, Penicillium Roqueforti

The Artisan Cheese Exchange, located in northeast Wisconsin, makes a great variety of wonderful cheeses.  Fromagination carries several of the Deer Creek brand varieties, including The Wild Boar, Imperial Buck, Blue Jay, Robin, Rattle Snake, The Doe, Vat 17 Cheddar and Proprietor’s Grand Reserve cheeses.  Founder Chris Gentine chose the names and labeling for these artisan cheeses based her affinity for a children’s storybook, The Golden Story Book of River Bend, which was written by Richard Scarry’s wife Patricia Scarry.

Pairing suggestions: Apricot, Lemon, or Pear Spritzer / Nut Brown Ale, Imperial Stout, Porters / Port, Sauvignon Blanc / Hard Ciders, Bourbon, Scotch / Cashews, Apricots, Pears, Pistachios, Artisanal Crackers, Honey, Lemon Curd.
