Chandoka cheese

Made from cow and goat milk.  This version is cave-aged which gives it a greater flavor-profile development.

Cube, shred, or slice this cheese since this one can definitely stand on it’s own or add depth to a recipe.

Chandoka cheese has a unique flavor since it is made from a 70% cow and 30% goat milk blend.  This dense, rich cheese has hints of butter, citrus and grass.

LaClare Family Creamery is located in Malone, Wisconsin.  It is known for cheeses and other products made from goat milk.

In fact, LaClare began as a farmstead cheese operation in 1978, created by Larry and Clara Hedrich.  Larry later started the Quality Dairy Goat Producers Coop to provide a continuous supply of high-quality goat milk for their business.

Their daughter, Katie Fuhrmann, is head cheesemaker for LaClare Family Creamery.  She helped create and establish their “flagship” cheeses, Evalon and Chandoka.  Both cheeses have won local and national awards.
