Pecorino Style Sheep Milk Cheese. Aged more than 6 months, this dense, nutty, slightly grainy cheese has a natural rind that is washed during aging. You might even say it’s a bit of a sheep ‘s-milk salute to a great Pecorino.  Pasta loves this cheese, great, we love it on Cacio e pepe, Carbonara, and perfect topping over roasted vegetables.  Shave over arugula, fennel, or citrus salads.  Use in crust for chicken or white fish. Fold into meatballs for extra umami. Best Wine:  Vermentino, Sauvignon Blanc, Chianti Classico.  Best Beer: Pilsner, Sison/Farmhouse Ale, Belgian Tripel.

A fourth-generation farming family with a deep love for working the land together. Hidden Springs purpose is to create cheese that is both wholesome and exceptional in flavor, while treating our animals and environment with respect. Sharing our passion through our products brings us joy, and we hope you experience that same joy with every taste.

As a farmstead creamery, every cheese we make begins here on the farm—where our sheep are born, raised, and nurtured on lush pastures. Each small batch reflects our dedication to purity, flavor, quality, as well as the well-being of their flock. Hidden Springs Creamery is the realization of a long-held dream. Nearly thirty years ago, in a small Vermont restaurant, we imagined building a dairy farm to produce our own artisan products. Life took us in other directions for many years, including deep involvement with
cooperatives that supported family farmers. Yet the dream never truly disappeared.

When the founding cheesemakers of Hidden Springs Creamery chose to retire, we were encouraged to carry forward their vision. With mentorship, dedication, and a passion for the craft, we embraced the opportunity. Today, we devote ourselves fully to nurturing the farm and creamery, each of us contributing our strengths—Travis overseeing farm operations, and Amy leading cheesemaking and customer relationships. Together, we share in marketing, sales, and market connections.

Hidden Springs is more than a creamery—it is a return to our
roots as a family farm. Caring for animals and land has always been at the
center of our lives, and we are grateful to live once again in this rhythm. Our
children, though grown, remain connected, often returning to lend a hand with
lambing and cheesemaking. Looking ahead, we remain committed to continuing
Hidden Springs’ tradition of award-winning cheeses while introducing fresh
ideas that reflect our family’s creativity and care.
