The Festival Cake of Cheese features three wonderful cheeses:
- Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California. It is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier. It ripens from the outside.
- Bent River is a soft, cow milk cheese made by Alemar Cheese Company in Mankato, Minnesota. This Camembert-style cheese possesses a mushroom flavor, and is smooth and creamy. Its light yellow paste grows more pungent as it is allowed to age.
- Pleasant Ridge Reserve cheese is made by Uplands Cheese in Dodgeville, Wisconsin. It is in the tradition of Alpine cheeses like Gruyere and Beaufort. Uplands makes only two types of cheese, and Pleasant Ridge Reserve is one of the United States’ most-awarded cheeses.
