Made from pasteurized sheep and goat milk.

Carr Valley Cheesemaker Sid Cook has created a U.S. version of the famous French cheese, Morbier.   The Wisconsin creation combines a layer of goat milk cheese with a layer of sheep milk cheese. He then separates them with a layer of grape vine ash.  Therefore, Mobay cheese has three ways of exciting your tastebuds – try the goat cheese layer, then the sheep cheese layer and the both.  The resulting flavors are rustic, yet delicate.

This is Wisconsin’s version of Morbier, the famous French cheese.  It’s a cheese you won’t forget.

Mobay won the Silver Medal at the 2011 World Cheese Awards and 1st Place at the 2009 World Championship Cheese Contest.

Pairing suggestions: Merlot Bellavitano cheese, Red Rock cheese, Cranberry Relish preserve, Piri Picante meat, Dried Cherries, Potter’s White Cracker, Ash Creek Dark Chocolate Hazelnuts
