Green Lake Cake of Cheese
The Green Lake Cake of Cheese features three artisan cheeses:
- Little Lucy is a soft pasteurized cow milk cheese made by RedHead Creamery in Brooten, Minnesota. This is a Brie, becoming oozy and creamy at six weeks, with flavor notes of grass and asparagus.
- Bent River is a soft, cow milk cheese made by Alemar Cheese Company in Mankato, Minnesota. This Camembert-style cheese possesses a mushroom flavor, and is smooth and creamy. In fact, its light yellow paste grows more pungent as it is allowed to age.
- Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California. Also, it is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier. In fact, it ripens from the outside. Additionally, this H.F. Remix contains a seasonal herb flavoring – lavender, fennel, dill, etc. – which rotates depending on the time of year.
This cake is approximately 6 inches wide (at its base) and 10 inches tall. It contains approximately 68 1-ounce servings of cheese.
