Wedding Bells Cake of Cheese

Wedding Bells Cake of Cheese

The Wedding Bells Cake of Cheese has something for the whole family…especially if they all show up at the nuptials.

This four-tier cake is anchored by Humboldt Fog, a goat milk classic.  The second layer is cow/sheep milk cheese, Meadow Melody.  The third layer is a mixed-milk cheese, Triple Play, and the top layer is a cow milk Brie.

The Wedding Bells Cake of Cheese is designed to serve a larger group and ensure everyone’s palate is pleased when it’s time for the toast.

Wedding Bells Cake of Cheese

The Wedding Bells Cake of Cheese features four cheeses:

  • Little Lucy is a cow milk cheese made by Redhead Creamery in Brooten, Minnesota.  Also, it is a pasteurized milk Brie, aged 4-14 weeks, that gets riper and creamier if you allow it to age.
  • Triple Play is a mixed-milk cheese made by Hook’s Cheese in Mineral Point, Wisconsin.  Furthermore, its name reflects the combination of sheep, goat and cow milks that flavor this unique creation, which the producer says has notes of Havarti, Gouda and baby Swiss cheeses.
  • Meadow Melody is  a mixed-milk cheese made by Hidden Springs Creamery in Westby, Wisconsin.  Best characterized as a young Manchego, this washed-rind cheese is creamy in texture and cave-aged for at least 3 months.
  • Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California.  It is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier.  In fact, it ripens from the outside.

This cake is approximately 8 inches wide (at its base) and 15 inches tall.  It contains approximately 132 1-ounce servings of cheese.
