Red Hawk cheese
A triple-cream cheese that is washed with a brine solution that develops the red-orange rind that gives this cheese its name. Cowgirl Creamery made this cheese by mistake! In fact, they were making a batch of their Mt. Tam cheese and a chef noticed that the rind wasn’t developing correctly, so she tried washing it off. Setting it aside, it was forgotten about. A few weeks passed and they tasted it and Red Hawk cheese was born.
Red Hawk cheese was awarded “Best in Show” at the American Cheese Society in 2003 and a Gold Ribbon in 2009.
