Hook’s Twelve-Year Aged Cheddar Cheese
Hook’s Twelve-Year Aged Cheddar Cheese is rich and complexly flavored, and has pockets of crystallized proteins that make an amazing addition to the flavor and texture of the cheese. It is still sharp, but its sharpness is tempered by its smooth savoriness.
Tony and Julie Hook have been making cheese in Wisconsin for more than 30 years. Starting out as a fairly small operation, the Hooks made primarily Cheddar and Swiss cheeses. Some years later they expanded to Colby, Monterey Jack, and flavored Jacks and eventually they grew to such an extent that they needed to find a larger working space. Many more artisan cheeses and awards later, the Hooks now make cheese from their Mineral Point location in southwestern Wisconsin.
