The Snow Bird Cake of Cheese features four cheeses:
- Bent River is a soft, cow milk cheese made by Alemar Cheese Company in Mankato, Minnesota. Additionally, this Camembert-style cheese possesses a mushroom flavor, and is smooth and creamy. Its light yellow paste grows more pungent as it is allowed to age.
- Timber Coulee is a sheep milk cheese made by Hidden Springs Creamery in Westby, Wisconsin. Made in the style of Basque cheese Ossau Iraty, this cheese is aged 6 months and is nutty with a buttery finish.
- Humboldt Fog is a goat milk cheese made by Cypress Grove in Arcata, California. It is a soft-ripened creation, with a streak of ash across the middle, like the French cheese Morbier. In fact, it ripens from the outside. Also, this Humboldt Fog Remix contains a seasonal herb flavoring – lavender, fennel, dill, etc. – which rotates depending on the time of year.
- Cambozola is a cow milk cheese made by Käserei Champignon in Heising, Germany. Furthermore, it is often referred to as a “blue brie,” with a rich, triple-creme consistency and blue mold added to give it a burst of flavor. In fact, this version is the Cambozola Grand Noir (black label) which is often used on high-end cheese boards
This cake is approximately 9 inches wide (at its base) and 13 inches tall. It contains approximately 192 1-ounce servings of cheese.
